Selecting Cuts of Meat

  • What are your most popular cuts of beef?

Our best-selling beef cuts include our Eye Fillet, Rib Eye and Sirloin.

  • What products would you recommend?

This depends on your personal taste and the event you are catering for. For the perfect BBQ try our Rib Fillet Steaks, Lamb Honey & Mint Sausages and our delicious Hamburgers. If it is meals for the family you are looking for, you can’t look past one of our succulent Lamb Roasts or a ready prepared Chicken Cordon Bleu. For something decadent try our Angus Grain Feed Beef or our top of the range Wagyu.

  • How do I tell how many servings I will get out of a cut of meat?

All our meat is sold by weight with the thickness also indicated. The Butcher recommends an average serving per person of 150g-200g for boneless meat and 250g-300g for bone-in meat.

For example, if you are catering for 5 people and wish to serve a bone-in lamb roast, we recommend you order at least 1.5kg of lamb. Remember however, to allow a little extra for those wanting a second helping and for leftovers the next day.

  • I'm looking for a specific steak. Why can't I find it on your site?

People across the world have different names for the same cut. If you're looking for a specific cut, but you can't find it under the name you're accustomed to, it's possible that we have it by another name. For example, Eye Fillet and Tenderloin are the same cut. Please use our search function to find the cut you are looking for.

If there's something in particular that you're looking for and can't find, email us or give us a call at 64720073.

  • How long will the meat last in my fridge?

The Butcher recommends that you freeze your beef, pork, lamb, veal & sausages if you do not plan to eat it within 2-3 days and your chicken if you do not plan to eat it within 1 day.

  • How long will the meat last in my freezer?

The amount of time you can keep food frozen relates more to the quality of food as opposed to food safety. After a certain amount of time, frozen food will start to dry out, and will not have the same high quality and flavour as fresh items.

The table below is our suggestion for how long meat should be frozen for and still taste good.

4-6 months

Ground beef mince

2-3 months

24 hours before you require the meat, place it in a container on the lower rack of the refrigerator. Prior to cooking the meat, place it on the kitchen counter to reach room temperature.

The Butcher does not recommend defrosting meat in the microwave oven or by leaving it on your kitchen bench/sink.
